Check out this free Italian recipe. It's for Cudiri (pronounced "Kood-eeri" in the Calabrese dialect). Cudiri is an old Italian favorite that's been loved by children and adults for years. In fact, children beg their mothers to make Cudiri, a simple fried dough treat that's easy and inexpensive to make.

Enjoy your first free Italian recipe from Italian Choices!
Authentic and real as they get.              

Cudiri

1/4 oz package Active dry yeast. (Found at your supermarkets)
4 cups flour
1 cup warm water
1/2 tsp. salt
Oil to fry*

Add yeast to warm water and stir until dissolved. Follow direction on the package. A tip: Let the water and mixed in yeast stand for 3 hours before using.

Mix flour and salt in a bowl. Add water with dissolved yeast to the flour mix. Knead the dough 5-10 minutes. Add more water or flour as required to have a non-sticky soft dough.  Form into a small loaf about 2-3 inches high. Place in a covered bowl or pan until double it's original size. 

Cut a small piece of loaf and pat with your palms into pieces 1/2"-1" thick by 3" wide or so and about 5" long. You don't need to form a perfect rectangular dough patty. (In the olden days, they didn't fuss. A small piece was ripped off of the dough after it had risen and patted to look like the shape of an éclair but thinner)  Place individually in hot oil, about 1 to 1-1/2 minutes on each side until light to medium brown. Sprinkle generously with sugar and serve warm. Enjoy!

The Cudiri recipe above is a great example of how easy it is for you to prepare authentic Italian recipes right in your own home using ingredients from your neighborhood grocery store.
