Pasta sauces. The first step to  delicious and tasty one starts with fresh tomatoes picked right off the vine.   In the real world though, many of us don’t have a garden filled with fresh tomatoes.

Immigrants who came to America from Italy relied upon fresh tomatoes from their gardens or a local farmer’s market as a stable ingredient in their diets.  Year in and year out, they used only fresh tomatoes when preparing their best Italian sauces.  It was not uncommon for them to buy many bushels of ripe, red, delicious tomatoes and then can them in sterilized and tightly sealed jars for future use.

As a youngster in the 1920s, I can still remember how moms and grandmas worked hard to can those fresh tomatoes.  It sure was a lot of work.  As a kid, I know.  I had to help out or I’d hear about it.  Tomatoes needed to be picked off the vines, boiled, peeled, strained, and bottled by hand quickly so as to preserve their freshness.      

It’s no wonder their sauces tasted so delicious and flavorful.

Tasty Tips for Pasta Sauce

Buy the best tomatoes you can buy!
Don't refrigerate fresh tomatoes. Not good for their flavor
For superior sauce, simmer the ingredients for 4 to 5 hours
Use either Parmagiano Reggiano or Pecorino Romano cheese
For meat sauces, use choice grades ground chuck  or sirloin
Mixing ground veal, beef, and pork work well together
If you're a beginner with sauces begin with small amounts to taste.
Use a small piece of bread, and dip into sauce to taste it
Add basil or oregano to sauce near the end of your cooking time.
Don't over use spices.  Taste frequently. Taste again. 
When the sauce tastes deliciously good, you'll know it!

Point of Interest: On Pasta Sauce Taste. Many pasta lovers don’t know the difference in quality between good pasta and a not-so-good pasta sauce.  Tip: a good sauce should not be pungent or tart.  It should have a genuine taste of good tomatoes. And that taste should be somewhat mellow and smooth.

 Pasta Sauce with Meat

Mouthwatering memorable Italian sauce can be prepared with a choice of one, two, or three different meats.  Pork, beef, chicken, veal, sausage, and turkey can be used.  A very popular combination is beef, pork, and veal.

During the depression, cheap beef bones were especially popular.  Surprisingly, spaghetti sauces using beef bones tasted quite flavorful.  Today, turkey has gained some popularity due to its comparatively low-fat content.  And chicken has always been very popular

Typically, it takes longer to prepare. This sauce should be simmered for 4 to 5 hours, adding water periodically.  Longer simmering helps to remove the tart taste from the tomatoes and have more meat flavor. A little tip: if your sauce remains tart, add a small amount of sugar.
